Rub the turkey meat with a mixture of salt, pepper and paprika. Chop the nuts into small pieces. Cut the ham into small cubes. Chop the kitchen herbs.

Mix the herbs, ham, nuts, breadcrumbs and mustard. Spread on the turkey meat, leaving the edges about 1 cm wide free. Roll everything up and tie.

3. Heat the oven to 150 degrees. Sear the meat heartily all around in hot clarified butter. Fry diced onion and paradeis pulp briefly. Pour the red wine. Add bay leaf spice and spice grains and cover the roasting pan with a lid and put it in the oven.

Cook the stuffed leg for about 1 hour, repeatedly basting it with the stock. Now remove, disassemble and keep warm. 5.
