For stuffed tomatoes with tuna, rinse the tomatoes and cut them in half.

Carefully scoop out the tomato halves with a spoon, use the pulp elsewhere. Place the tomato halves, cut side down, on paper towels.

Drain the tuna, reserving the oil. Finely grind half of the tuna with draining oil and juice of one lemon. Finely shred remaining tuna with a fork.

Clean and rinse spring onions, cut into fine rings. Set aside 3 tablespoons of the green rings for sprinkling. Finely grate cheese. Mix tuna puree with cheese and spring onion rings. Season with salt and pepper.

Lightly season tomato halves inside with salt and pepper, fill with tuna mixture.

Sprinkle stuffed tomatoes with tuna with the green spring onion rings set aside.
