Instructions:

For the dough, mix the flour with eggs and salt and add enough water to make a firm, smooth dough. Let the dough rest for a while. In the meantime, prepare the filling. Fry the finely chopped onion and the finely diced bacon, add the mashed potatoes and season with salt, pepper and grated cheese. Roll out the dough to the thickness of the back of a knife and cut into even rectangles. Place a tablespoon of the filling on the bottom half of each piece of dough, brush the edges with a little egg white, fold the other half over, close and press down well on the edges. Boil the Maultaschen in boiling salted water for about 5 minutes, strain and serve hot sprinkled with grated tartar cheese and drizzled with brown butter.
