For the stuffed strawberries, wash the strawberries, drain well. Do not pluck the leaf calyxes. Cut the berries in from the tip to the calyx, but do not cut through.

Mix the lemon juice, rum, heavy cream cheese and a little sugar to make a cream. Add a little milk if desired. Fill into a piping bag.

Squeeze the strawberries a bit apart and squirt the cream into them. Arrange the filled strawberries for snacking and serve.
