For the vegan stuffed peppers, cut a cap off the top of the peppers, wash inside and out and hollow out if needed.

Mix cooked rice with chopped tofu cubes, salt, pepper and thyme. Press the mixture into the peppers, put the lid on.

Boil water, dissolve soup cubes, place peppers in an oiled heatproof container and pour soup over them. Bake the vegan stuffed peppers in a preheated oven at 200 °C for about 15 minutes.
