Wash the potatoes. Place pieces of aluminum foil next to each other and lightly oil them. Place the potatoes on top and wrap tightly in the aluminum foil. Cook in preheated oven at 225°C (convection oven: 200 °C) for approx. 70 minutes. Peel and finely chop the garlic. Clean, wash and finely dice celery. Wash chives and cut into rolls except for a few stalks for garnish. Mix everything with brunch and mineral water. Stir in green pepper and season the cream with salt and cayenne pepper. Remove the potatoes from the oven and open the foil. Make crosswise cuts in the potatoes, tear them apart slightly with the help of 2 forks and pour in the mixture. Serve the stuffed potatoes garnished with chives.
