Slit the vanilla bean lengthwise, scrape out the pulp and place in a small saucepan with the olive oil, also add the chopped vanilla pod and heat for 3 min at a low temperature (heat the oil to no more than 50 °C).

Set aside and let the oil with the vanilla infuse well for a few time.

Rinse the strawberries, drain well, remove the stalks. Divide fruit evenly among four dessert plates. Rinse and pat the lime, very finely scrape the zest on a grater, mix with the sugar and sprinkle the whole over the strawberries. drizzle a few squirts of freshly squeezed lime juice over the top. Finally, add the vanilla oil.
