For the Steckerlfische first prepare the charcoal embers.

Season the well-washed fish inside and out with salt and sprinkle with pepper. Skewer each fish lengthwise on a sharpened stick of soft wood. Drizzle with a little oil. Place a bay spice in each fish.

Place a few fresh wood sticks on the embers to develop smoke. Cook the fish, turning the sticks frequently, until brown and crispy, about 20 minutes. In between, drizzle with oil and juice of a lemon.

Serve Steckerlfische hot with fresh bread.
