For the smoked brook trout spread, place cashews in a blender jug and just cover with water.

Add garlic clove, salt and lemon zest and blend with a hand blender until creamy. Chop brook trout fillet into small pieces, dice bell bell pepper.

Mix the char pieces and diced peppers with the cashew cream, season with salt and serve sprinkled with dill.
