For the spinach quesadilla, wash the spinach, chop the onions and garlic, cut the cheese into small cubes or grate coarsely.

Heat 1 tablespoon of olive oil in a pan and sauté the onions until translucent, add the garlic and sauté briefly, then add the spinach leaves and sauté until they have collapsed.

Season with salt, pepper and chili. Place the 4 tortilla wraps, top each half with spinach filling and cheese and fold the other half over.

In the same skillet, heat a little olive oil, place two quesdillas in and fry until brown on both sides. Fry the other two from both sides as well.

Serve the quesdillas hot with fresh salad.
