Blanch the washed spinach in salted water. Drain the leafy vegetables and cool.

In the meantime, melt 1 tbsp butter, sweat flour in it and extinguish with chicken soup. Boil to a creamy sauce. Mix in the squeezed and finely chopped spinach. Season with salt and nutmeg. Fold in the remaining butter and bring to the table.
