Spinach and Potato Gratin with Salmon

Instructions:

Rinse potatoes and make in salted water 20 min.

Peel onion, cut into cubes. Select spinach, rinse. Sauté onion in 20 g hot butter. Add spinach and fall together. Season with pepper, nutmeg, salt.

Heat remaining fat. Sauté flour in it. Extinguish with clear soup and whipped cream. Simmer for about 3 minutes. Add lemon peel and a little bit of lemon juice. Season sauce, refine with egg yolk.

Remove salmon from skin. Sprinkle with juice of one lemon and season with salt. Peel potatoes and cut into slices. Grease an ovenproof dish. Arrange potatoes, spinach and salmon in it. Pour the sauce over it. Bake in a heated oven (electric stove: 180 °C / gas stove: level 3) for 25 minutes.
