Shortcrust pastry: Put all the ingredients except the water on a surface form and chop with a large kitchen knife. Later knead with your hands until smooth, gradually adding the water. Place the dough in the refrigerator for one hour.

Preparation quiche: 1. Roll out the prepared dough and place it in a greased shallow ovenproof dish of about 26 cm ø.

Press up the edges and prick the work surface a few times with a fork. Preheat oven to 220 °C.

Select, rinse and blanch spinach. Squeeze well and chop coarsely. Sauté diced shallots and garlic clove in butter until soft and add spinach. Season, chill a little. Place ham slices on the dough base and spread spinach evenly on top.

Mix eggs and whipped cream, pour over the top and sprinkle with pine nuts. Bake on the bottom rack in the oven for about 40 minutes.

Our tip: Use the young, tender spinach from the farmers’ market!
