For the semolina dessert, stir the spelt semolina with the raw cane sugar into the milk and bring to the boil. Add ginger, turmeric and cinnamon and let it simmer a bit.

Pour into 2 glasses. Puree the mango with the lemon juice, season with the lemongrass and layer on the semolina boil.
