Serving example: beef with vegetables and spicy orange chili sauce.
Meat Preparation:
Rinse and dry beef shank steak and cut into strips. Stir together pepper, rice wine, salt, sugar and egg white. Add onion and garlic. Shape meat into a bowl, add marinade and marinate for 1 hour.
Sauce:
Bring lemon sauce, soy sauce, orange juice, sugar, oil, chili sauce and water to a boil. Stir potato flour with a little bit of water, thicken sauce with it, keep warm.
Serving example:
Steam prepared vegetables (“en julienne” means cut into fine strips about 4 cm long, like matchsticks !) in hot fat for 5 to 7 min until soft.
In the meantime, drain meat in a sieve.
Season vegetables, keep warm.
Turn meat in potato flour to the other side. Fry in hot fat for 3 to 5 min until golden brown.
Spread vegetables evenly on well-heated plates, arrange meat on top, serve with orange-chili sauce and curry rice.
