Instructions:

A great noodle dish for any occasion:

Heat a large wok or skillet.

Add chilies, garlic, tamarind paste, fish sauce, sugar, ginger, lime leaves, and chicken soup to wok form and bring to a boil, stirring throughout. Reduce temperature and simmer for 5 min.

Cut the chicken meat into fine strips with a sharp kitchen knife. Add the chicken to the wok form and cook for another 5 min, stirring and tossing well.

Reduce the heat and add the carrots, sweet potatoes and corn cobs to the wok. Simmer uncovered on low heat for 5 minutes, or possibly until the vegetables are just tender and the meat is fully cooked.

Stir in the chopped cilantro leaves, cocktail tomatoes and flat rice noodles.

Simmer the soup on low heat for about 5 min or until the noodles are cooked.

Garnish the spicy soup with fresh, chopped coriander and serve hot.
