For the Buffalo Hot Dogs, prepare the relish first. For the relish, in a medium bowl, mix the shallots with the vinegar and let sit for 20 minutes. Place celery cubes in a fine sieve.

Bring 750 ml of water to a boil and slowly scald the celery cubes over the sink, drain well. Add celery to shallots in bowl with remaining ingredients for relish and mix until evenly combined.

Prepare the grill for direct medium heat (175-230 °C).

Cut the sausages in several places flat and at a slight angle and grill over direct medium heat with the lid closed for 4-5 minutes until hot through and through, turning occasionally.

During the last 30-60 seconds of grilling time, toast the buns over direct heat, cut sides down.

Spread 1 generous spoonful of relish evenly on the bottom of each bun (you may not need all of the relish), top each with 1 sausage, blue cheese, and hot wing sauce, and serve the hot dogs immediately.
