Instructions:

For the wholemeal spelt egg dumplings, mix 2 eggs with salt, oil and milk. Add flour and mix briefly. Let dough rest for ½ hour.

In a large pot, bring 3 – 4 l of salted water to a boil. The dough should be viscous. If necessary, mix in some more milk or flour.

Press the dough through a dumpling slicer into the boiling water. Cook for 3 – 5 minutes until all the dumplings float to the surface.

Then empty them into a sieve and let them drain. Heat oil in a large pan and fry the dumplings in it.

Beat eggs over them, add salt, mix and let them set.

For the salad, dice the tomatoes, cut the onions into fine rings and chop the rosemary.

Marinate in a salad bowl with balsamic vinegar and pumpkin seed oil and season with salt.

Arrange the wholemeal spelt egg gnocchi with the paradeis salad, sprinkle with chopped parsley and serve.
