For the spelt soup with Vulcano soak the spelt overnight, drain in a sieve. Sauté the finely chopped shallot in a little butter, add the spelt and the bones of the smoked carrot, pour in the stock and simmer for about 15 minutes, add the chopped vegetables and simmer for another 2-3 minutes.

Remove the bone from the soup, stir in whipped cream, season with salt and pepper. Before serving, blend the soup without the vegetables and spelt. Then add the spelt and vegetables to the soup and garnish with fried Vulcano ham strips and chervil.
