For the spelt dumplings, mix the spelt bread with the warmed milk. Season with salt, pepper, a pinch of nutmeg and the parsley. Beat the eggs and mix into the mixture.

Finely chop the onion and sauté in butter. Add to the dumpling mixture and knead well. Leave to stand in the refrigerator for about 30 minutes.

Form dumplings and let them stand in a pot of lightly boiling salted water for 20 – 30 minutes.
