For the Somlauer Nockerl, beat the eggs and powdered sugar in a food processor until foamy. Mix flour with baking powder and fold into the mixture. Divide the mixture into three parts.

One third remains normal, one third with walnuts and one third with cocoa mix. Put all three parts on a baking sheet, bake in the oven at 160 °C for about 20 minutes and let cool.

Heat the rum, sugar and water until the sugar has dissolved.

Prepare a custard for the vanilla sauce.

In a baking dish place the 1st part of the mixture, soak it with rum-sugar-water mixture. Spread the custard on top – place the second sponge mixture on top and soak again – then repeat the process once more.
