For the snow dumplings, lightly whip egg whites and beat with granulated sugar until firm. In a saucepan, bring the milk to a boil with the vanilla pulp and vanilla sugar. Use a tablespoon to make dumplings from the snow mixture and place them in the boiling milk. Leave to stand for about 2 minutes, turn over and leave to stand for a further 2 minutes on the edge of the stove (or at a very low heat). Then lift the dumplings out of the milk and let them drain. For the custard, whisk 2-3 tablespoons of milk with the custard powder until smooth. Bring the remaining milk to a boil with sugar and the vanilla bean. Take out the vanilla pod and scrape off the pulp. Whisk the mixed custard powder into the milk while stirring vigorously. Allow to boil once, remove from heat and allow to cool briefly. Arrange the Schneenockerl and serve with the lukewarm vanilla sauce.
