Hard boil eggs, rinse, peel and chop finely. Mash anchovy fillets with a fork to a pulp. Peel and finely chop shallots. Mix apple cider vinegar, sunflower oil, salt, eggs, shallots, anchovies and horseradish well. Cut the snails into fine strips, mix with the other ingredients and serve with bread.
