Instructions:

1. sugar, salt, bay spice, 4 thyme, juniper berries, new spice, cloves, pepper and coriander seeds in 1/2 ltr water make 5 min and cool. Put salmon in the pickle for 15 min, take out and dry a little bit.

2. sprinkle beech flour and remaining juniper berries in the center of a wok. Heat wok on kitchen stove at high temperature for 7-10 min until flour begins to smoke slightly. Place salmon strips on a steamer insert (20 cm ø), place over beech flour in wok and place lid on top. Place wok on 2nd rack from bottom in stove heated to 180 °C (gas 2-3, convection oven not recommended).

Cook salmon for 12-15 minutes.

Serve the salmon with fresh herbs, mustard sabayon and brown bread.

Our tip: It is best to use fresh herbs for a particularly good aroma!
