For the smoked herring salad with lemons and artichokes, first wash the potatoes and steam them for about 30 minutes. Then peel them and leave to cool until lukewarm.

Clean the artichokes, leaving part of the stem and peel. Cut off hard leaves and leaf tips. Cut the cleaned artichokes in half lengthwise and immediately sprinkle with a little lemon juice. Cook in salted water for 4-5 minutes until tender. Drain and leave to cool.

Peel and finely dice the shallot. Bring to a boil with the soup and vinegar. Remove from heat and let cool slightly. Cut the lemons into wedges and add. Cut the herring into strips.

Cut the potatoes into wedges. Pour the soup over them, add salt and pepper, mix in the artichokes and the herring and leave to stand for about 10 minutes. Finally, mix in the oil and season the smoked herring salad with lemon and artichokes.
