Cut the lids off the tomatoes and hollow them out. Season heartily with pepper and salt and drizzle with olive oil.

Briefly roast walnuts and shallot in olive oil, mix with capers and basil, season and fill into the tomatoes. Place on an oiled baking tray and cook at 200 degrees until brown.
