For the small poppy seed cake with lemon glaze, first separate the eggs. Beat the beaten egg whites with 1 tablespoon of granulated sugar until stiff. Beat egg yolks, remaining sugar and poppy seed oil until foamy. Mix in poppy seeds and rum.

Mix in the spelt flour and carefully stir in the mineral water. Fold in beaten egg whites and spread the mixture into a greased and floured small springform pan (diameter 20 cm).

Bake at medium heat. Let cool, cut in half , spread with raspberry jam and put the top part back on.

Mix the lemon glaze with the juice of one lemon and the powdered sugar. Brush the cake with it.
