Instructions:

For the apple marzipan cake, prepare a short pastry from the ingredients with the mixer (dough hook). It is best to cut the marzipan into small pieces beforehand – it sticks a bit but it is easier to mix.

Wrap the shortcrust pastry in foil and put it in the fridge for 1 hour. Peel and chop or grate the apples. Immediately sprinkle with lemon juice.

Stir in sugar, raisins, yolks and spices. Add marzipan in small pieces, dust with flour and mix again.

Roll out the shortcrust pastry into a round shape – slightly larger than the cake tin and place in the greased tin. Raise the edge to the same height.

Pre-bake in a preheated oven at 160 degrees for about 8-10 minutes, then fill with the apple mixture.

Bake for about 25 minutes. Mix egg whites, sugar and lemon to a stiff snow and carefully spread on the cake.

Place the apple marzipan cake in the oven again for about 10 minutes, until the top is lightly browned.
