Slip Pears with Hemp Nuts

For the slipped pears, soak the hemp nuts in lukewarm milk. Prepare a cream with butter, sugar, vanilla sugar, salt, egg yolks, lemon juice and curd. Beat the egg whites until stiff.

Carefully fold into the mixture with the hemp nuts. Wash the pears, cut them in half and remove the core. Fill each with 1 teaspoon of red raspberry jam.

Pour half the mixture into a greased baking dish, place the pears in it and spread/cover with the remaining mixture. Bake in a preheated oven at 180 °C for about 50 minutes.

Sprinkle with powdered sugar and serve hot with applesauce.
