For the simple wholemeal spelt bread, put all the dry ingredients in a bowl, add lukewarm water and balsamic vinegar and knead well, preferably with a food processor for 8 minutes.

The dough should come away from the side of the bowl. Cover bowl with a damp cloth and let rise/rest for a good 60 minutes.

Preheat the oven to 180°C degrees. Line a loaf pan with baking paper and pour in the dough. Bake the plain wholemeal spelt bread for about 50 minutes and let it cool completely on a rack.
