Chop the tomatoes, heat with the juice, the vegetable stock cube and the diced cooked potato. Pass through a fine sieve with a straining rod. Reheat the soup, add whipped cream and season with pepper, salt and sugar. Divide evenly among soup plates and place a dollop of sour cream or crème fraiche in the center.
