For the shortcrust apple pie, first make the shortcrust pastry. Knead the flour with the sugar, vanilla sugar, egg, lemon zest and the butter cut into small pieces and let it rest in the refrigerator for about 1 hour, wrapped in foil.

In the meantime, cut the apples into thin wedges and sprinkle with lemon juice. Mix apples with granulated sugar, cinnamon and rum.

Cut the shortcrust pastry in half, roll out one half to the size of the baking tray, prick with a fork and bake at 180 °C for about 10 minutes. Sprinkle grated almonds over the finished base and spread the apple mixture on top.

Roll out the remaining short pastry as well and place it on top of the filling. Beat the egg and brush the cake with it, then bake for 35-40 minutes.
