This is how you prepare mussels that are already desanded & debearded:

Cover the bottom of your clam pot with water and then fill it three-quarters full with clams.

Now add chopped greens. Add 1 tbsp mustard, 2 tbsp crème fraîche and the mushrooms that have been lightly sautéed in butter. Dice the tomatoes, chop the fresh dill and add.

Close the lid and let the contents bubble up quickly. Stir the mussels from time to time so that the mussels and ingredients mix well.

When all the mussels are open, let them simmer for another 5 minutes at the most, add a dash of cognac and bring to the table.

It goes well with baguette (white bread), French fries, a sauce and raw vegetable salad.
