For the semolina pancake with pistachios, bring the milk, butter, vanilla sugar and salt to the boil, stir in the semolina and cook until thick, then allow the mixture to cool. Preheat the oven to 180°C. Beat the egg whites together with the sugar until stiff and stir into the semolina mixture alternately with the yolks, finally stir in the pistachios. Heat 1 tablespoon of butter in an ovenproof pan, pour in the mixture and let it brown briefly. Put the pan in the oven and bake for about 20 minutes.

Turn the pancake over and brown it on the stove also on the underside. Break up the semolina pancake with pistachios with two forks and sprinkle with powdered sugar before serving.
