For the oat cookies, soak the cranberries in rum. Whisk together light butter, egg and birch sugar. Add salt and orange zest.

Mix the flours with the baking powder and knead into the dough, then add the cranberries. Shape the dough into balls, flatten slightly and sprinkle with oat flakes if desired.

Bake at 180 degrees top/bottom heat for about 15 to 18 minutes on the 2nd rack from the bottom until they get color at the bottom.
