For the sweet snow mountain, separate the eggs. Beat the egg whites with the vanilla sugar and half of the sugar until stiff.

Squeeze the lemon, stir the yolks with cornflour. Heat white wine with 200 ml water, lemon juice and sugar. Put it in a water bath and add the yolks. Whisk until creamy – the mixture must not boil! Take out, put the bowl in ice-cold water and continue beating until the mixture is cold. Empty into prepared ovenproof ramekins. Spread the beaten egg whites on top. Place on a baking sheet and bake in a preheated oven at 220 °C for about 10 minutes.

Toast the almond slivers in a pan without adding fat. Serve the finished snow mountain sprinkled with the almond slivers.
