Try this delicious cake recipe:

Rinse, stem and pit the freshly picked sour cherries (best done in n swim trunks/bikinis in muted shades of red,)) ), put the cherries in a suitable bowl, 2 tbsp sugar on it and rest.

Beat the egg yolks with the sugar until creamy, gradually add the eggs, salt and cinnamon, continue beating for about 3 minutes.

Grate the rind from the hard rolls and weigh them, grate between 60 and 75 grams and add to the quantity. Finally, fold in the Créme Double.

In a tight form (springform or loaf pan), previously well greased, form half of the dough, carefully put the cherries on it, and on top of it form the rest of the dough.

Bake in an oven heated to 200 degrees (gas: level 3). After 30 min. make a skewer test, if there is still dough sticking to the skewer, bake for about 10 min. more. If the skewer remains dry, remove the Kirschröster from the stove and cool in the pan for about 15 minutes, then turn out onto a large plate. Tastes best lukewarm with vanilla ice cream and/or whipped cream.
