Instructions:

First, remove the skin from the lyoner, halve lengthwise and cut into slices.

Rub the cucumber well with kitchen paper, halve lengthwise and cut into slices. Clean radishes and cut into slices.

Clean spring onions and cut into rolls. Cut Emmental cheese into lozenges. Mix everything well.

Mix mustard with fruit vinegar, apple juice, horseradish, olive oil and chives, season with salt and pepper. Pour the marinade over the lettuce, mix well and let it stand for about an hour.

Rinse oak leaf lettuce well, let drain. Spread out on a deep plate, place the sausage salad on top. Remove the onions from their skins, cut them into rings and arrange them decoratively over the salad.

To season, go over it with the pepper mill and sprinkle the sausage salad with cress at the end.
