Prick the farmer’s sausage evenly on both sides with a wooden stick. Place in a pan and add the soup. Simmer on low heat until the liquid is completely reduced.

In the meantime, chop the onions. Once the soup has boiled down, spread evenly over the sausage and roast leisurely in the sausage fat until golden brown on both sides.

Only now add the white wine, bring to a boil and make everything together quietly for another twenty to twenty-five minutes, pouring jus regularly over the sausage.

Chop the parsley. Sprinkle over the sausage just before serving.

Farmer’s sausage – The raw sausage made of spicy pork is available per piece, but mostly “by the meter” in a spiral wreath, in which case it is sold by weight. Its sausage meat can be finer or possibly coarser, but it is usually strongly seasoned. To prevent the skin from bursting, the sausage can be blanched briefly in hot water before frying. The same can be achieved if you cook it in a little soup in the pan exactly as described in the recipe before frying it. If you can’t find a bratwurst by the meter, you can cook the dish with individual pork bratwursts. Per person, calculate 1-1 1/2 bratwursts.
