For the sauerkraut with crispy meat, heat the lard, fry the pancetta in it and simmer slowly on half heat. Finely chop the onion.

After about 5 minutes, take away some of the hot lard and put it into another pot. Slowly brown the onion in it, add the molasses, dust with cornstarch and pour in 200 ml of water.

Add the sauerkraut and cook for a few minutes. In the meantime, turn the bacon and season the cabbage.

Arrange the sauerkraut with crispy meat and serve.
