For the saltimbocca with mashed potatoes and peas, salt the meat and season with sage powder or sage leaf. Put prosciutto on the meat and fix it. Sear the meat vigorously and remove it. Dust the juices from the frying residue with flour and deglaze with water. Let the meat steam in it for about 10 minutes.

For the mashed potatoes, peel the potatoes and boil them in water for about 20 minutes until soft, strain and mash with a potato masher. Mix in the butter and milk and season with ground nutmeg and salt.

Boil the peas in salted water until soft, about 10 minutes, strain.

Arrange the saltimbocca with mashed potatoes and peas and serve.
