Cut the veal cutlets and the ham slices into three pieces each. Season the pieces of meat lightly with pepper and cover each with a slice of ham and a sage leaf. Pin with small wooden skewers.

Heat butter and oil in a frying pan. Fry the meat slices for about one minute on each side and remove. Deglaze the pan with Marsala and orange juice, season with salt and spread evenly over the meat slices.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
