Defrost the spinach at room temperature, season with salt, pepper and nutmeg. Stir sour cream or crème fraiche with whipped cream and horseradish until smooth.

Peel garlic and chop very finely. Rinse chives and cut into fine rolls. Mix both with sour cream or crème fraiche, creamed horseradish and the spices. Spread sour cream mixture on patties, evenly distribute salmon on top and spread spinach leaves on top. Roll up tightly in greaseproof paper.

Tip: If you like, you can also rinse 700 g of fresh spinach, clean it and blanch it in boiling salted water. Process further as above.

Tip: Always use aromatic spices to refine your dishes!
