A delicious mushroom dish for any occasion!

Fresh oyster mushrooms and ginger give this tasty dish a touch of exoticism. Ideal as a light dinner in the summer or possibly for a leisurely brunch. Wild rice is recommended as a side dish.

Cut the salmon into four pieces. Heat 1 tsp (15 ml) butter and 1 tsp (15 ml) olive oil in a frying pan and sauté the mushrooms together with the green onions.

together with the green onions for about 2 min, stirring continuously.

Remove from the frying pan, season with salt and pepper and keep warm in a baking dish. Add the rest of the butter and oil to the skillet and sauté the salmon pieces for 4 min on each side. Remove and keep warm in another baking dish.

Add garlic and ginger – perhaps with a little butter and oil – to the frying pan and sauté for 1 min until soft. Add mushroom and onion mixture, juice of one lemon

and soy sauce and let it bubble up. Spoon the mixture evenly over the salmon pieces and bring to the table on the spot.
