Cut kale leaves from the stalks. Rinse thoroughly and blanch in enough boiling hot salted water for 2 min. Rinse with cold water and drain well. Fillet oranges, reserving the juice. Peel and finely dice shallots, sauté in hot fat, deglaze with whipping cream, Noilly Prat, stock and orange juice. Cook a little. Season, add kale, place salmon on top and cook at low temperature for 10 min in closed saucepan. Fold in orange fillets.

Serve with roasted potatoes.
