Salmon on a Bed of Vegetables with Hollandaise Sauce

Instructions:

Sprinkle salmon with juice of one lemon.

Cut vegetables into very fine strips. Heat the butter, sauté the vegetables in it and cook for 5 minutes until soft. Season with salt and freshly ground pepper and place in a greased gratin dish.

Season salmon with salt, place on top of vegetables, pour champagne over and place in preheated oven with lid closed.

For the sauce, stir egg yolks with lemon zest, wine, water, salt and pepper until cooled and beat until thick.

Add softened butter in flakes and continue beating until dissolved. Season to taste with a little lemon juice. Serve hollandaise sauce separately with salmon.

Accompanying dish: Boiled potatoes, Vogerlsalat with mushrooms.
