Rinse salmon fillet, dry, divide into four portions, acidify. Brown diced onion, carrot and crushed garlic clove in 20 g butter. Extinguish with wine and water. Season, cook in about 20 minutes.

Transfer to a sieve, reserving the pan juices (remove vegetables). Season fish with salt and brown in 30g hot butter. Add broth and steam fillet on both sides for 4 minutes until tender. Remove salmon. Stir remaining butter in flakes into the broth (do not make!). Season to taste. Serve fish with sauce. Garnish with tarragon if desired.

Serve with deep-fried celery strips.
