For the classic Sacher cake, cream the butter (at room temperature) with the sifted powdered sugar until fluffy, gradually add the yolks and mix well.

Heat the chocolate and add to the mixture. Beat the egg whites a little, slowly add the fine crystal sugar and vanilla sugar and beat until stiff.

Gently mix the two masses. Finally, slowly add the flour sifted with baking powder and fold in. Pour into a greased and floured springform pan and bake at 170° for about 45 minutes. After cooling, cut the cake once in the middle and fill well with warmed apricot jam. Place the second half on top again.

Now spread the top and the edge thinly with jam. Heat the margarine and cooking chocolate and glaze the Sacher cake with it.
