Knead almond kernels, sifted powdered sugar (1), rose water (1) and the bitter almond flavoring with your hands. Roll out marzipan between two layers of parchment paper to about 3 mm thick and cut out about 25 hearts (5, 5 cm ø). Roll dough scraps into strands about 5 mm thick.

Brush edges of hearts with rose water (2). Place marzipan strands as an edge on the hearts and press slightly smooth. Place the hearts on a baking tray lined with parchment paper and grill in the oven for 3-5 min until the surface is lightly browned.

Cool.

Stir together confectioners’ sugar (2) and egg whites. Brush the center of the hearts with it. Quarter cherries and decorate hearts with them.

Dry. Heat the jam in a small saucepan and brush the hearts with it. Dry.
