Instructions:

For the rum pot, the different fruits are pickled at intervals of several weeks. It is best to start with the strawberries.

Cut large strawberries into pieces. Mix with half as much sugar as the weight of the fruit and let steep for about 1 ½ hours. Place in a glass or earthenware jar and pour the rum over them. The fruit must be completely covered with the rum! Place a saucer on top of the fruit to keep it from floating to the top and spoiling the batch. Cover and let the batch ripen in a dark place for about 4 weeks. Then sugar the next layer of fruit (remove seeds if necessary and cut large fruit into pieces) and allow to infuse for 1 ½ hours. Pour on top of the batch and add rum again. Proceed in the same way with the remaining fruit.
